Simple's ethos points to a cleaner ethos than most restaurants you'll find clustered in the city centre. Absolutely nothing - not even their patacones - is fried. Everything is super light, fresh and blooming in flavour.
The translucent Vietnamese rolls, stuffed with shredded pork, mango and veggies, will have your tastebuds fawning over it like a teenager. Whilst the tuna tartare is the ultimate cleanser, lightly sating your palette for the main course.
It's simple, but there’s diversity on the menu, especially for celiacs, vegetarians and any soul with a food intolerance, who can come here for a real feed.
There is a separate menu for fussy tummies, and the kitchen is trained in substituting carbs and meat for suitable alternatives. They don't sell healthy, they just do it.

Everything on Az-zahr’s fantastic menu is lovingly prepared and beautifully presented. Apart from being one of the tastiest places to eat in Cartagena, it’s one of the healthiest too.
Work your way through some sensationally, good-looking, super healthy meals.
Try the Lebanese yoghurt sprinkled with digestible flowers, puffed-up pittas and a handsome Manoush – Az-zahr’s Burrata served on a crispy base with tomatoes and basil oil.
There’s the brilliantly worked Lebanese staples – Kibbes, Baba Ganoush, almond rice, stuffed vineleaves, as well as plenty of creative culinary offerings on the menu. Never has being healthy been quite so delicious.
Exercise | Run, Tourist, Run!
In the early morning and late evening you will notice a shift in Cartagena's city pace. The casual, midday saunter around town is replaced with the pitter-patter of pounding feet by the sea's edge.
Why would you stand still gawping at landmarks when you can run around them instead?
Cartagena's majestic walls and Bocagrande's modern skyline serve as functional and inspiring backdrops to athletes that like to exercise with a view.
While you probably won't be able to practice any marathons in this climate, it's the perfect chance to get your blood pumping. Head towards Bocagrande's beach promenade to join the inhabitants (and their Chihuahuas) for a jog around the block. If you're closer to the centre, go to Avenida de Santander, jump on the wall and soak up the sunset as you break a sweat.
Wear good shoes and keep an eye on the pavement - Cartagena's streets like to surprise your step with the odd pothole or missing manhole cover. Be warned.
